'Gamepad Sensitivity' setting does not persist

The new 'Gamepad Sensitivity' setting introduced in Hearth & Home was one of the most desired among players with gamepads/controllers. Changing the setting in-game works as expected, but the setting does not persist (i.e. restarting Valheim causes the setting to return to its default value).
To reproduce: (1) start the game; (2) open the menu 'Settings'; (3) change the option slider 'Gamepad Sensitivity'; (4) click the button 'Ok'; (5) restart the game; (6) inspect menu 'Settings' for the value in the option slider 'Gamepad Sensitivity'.
